The Menu
We asked each person on staff to bring their favorite holiday dish — something they wanted to make or a traditional family recipe. We sat, we ate, we drank and then we put all the leftovers in a box with a timelapse camera to see what would rot. And what would not. All under the theory that foods that rot are better for you, because they are more fresh, have more nutrients and less preservatives. It's all part of an experiment to better understand what we put in our bodies this holiday season. These were the dishes we wound up with.
